How is cheese made? It's a process that smells of milk and hay, with milk from cows grazing on the Alpe Lusia
How does simple milk turn into cheese? At first glance, it seems like magic. And perhaps it is, in a way. The basic ingredient, as we know, is milk. But not just any milk: it comes from cows that, from June to September, graze peacefully on Alpe Lusia, feeding only on fresh grass and fragrant hay. This is where our journey begins, amidst tales of mountain pastures, quiet barns and skilled hands. In this workshop, we'll discover the ancient art of cheese-making through a small experiment: a simple gesture that reveals a fascinating world of enzymes, transformations and patience. We’ll tell you about the journey of milk, from the moment it flows warm from the milking parlour to when it transforms into a fragrant, flavourful cheese. Is it magic? Is it chemistry? Is it farming wisdom passed down through the ages? Perhaps all three together. But one thing is certain: behind every little piece of cheese there's a story worth hearing!
