The delights and memories of Ladin cuisine

From characteristic family-run mountain-style eateries to the most refined of restaurants with signature dishes inspired by regional produce, from mountain huts to alpine refuges, to the bars and pastry shops down in the valley... In the Fassa Valley you'll experience authentic Ladin cuisine and be welcomed by the flavours of food that tastes of home. 

Many former alpine huts are now places where visitors can stop for refreshments and enjoy the best traditional Ladin recipes. Steaming polenta made in copper cauldrons just like it used to be, platters of charcuterie and local cheeses, dumplings, barley soups, the traditional "cajoncie" ravioli made from potato dough, sauerkraut served with sausages, spare ribs and pork loin... Then there are cinnamon apple cakes and the typical fortaes, deep-fried snail-shaped pastries topped with icing sugar and blueberry jam.

Of course, there is no shortage of food and wine festivals where you can satisfy your curiosity. You'll also find some Michelin-starred restaurants: L Chimpl in Tamion (Vigo di Fassa), led by chef Stefano Ghetta, and Paolo Donei's Malga Panna in Moena.

The ingredients are gifts from our land, the produce comes from our fine mountain pastures. Our culinary knowledge has been handed down over time and developed by the Ladin people in the kitchens of the Fassa Valley. Shall we add a seat at the table?
